Day Number Two! Paleo Schmaleo!
CONFESSION: Yesterday I finished my blog on the early side and I had a hard time with cravings last night! I am a late night snacker, and by that I mean delicious chocolate-y ice cream, with potato chips and fudge! Or how about a deliciously yummy home made cookie! NO! NO! NO! Instead I opted for organic coconut flakes and baby carrots. It was tough, but I did it and I feel really good about it. Actually I feel amazing!
One thing you may not all know about me is I am getting married this year in November. I have a lot of stuff going on and sometimes get really busy. Today I went with my oldest sister Olivia to get her fitted for her bridesmaid dress and we were out for an extended period of time. Sadly I didn't pack any snacks. I am used to stopping and grabbing whatever I may want and today I couldn't. This was a challenge, however, I made it home because my lovely bottled water that I now carry everywhere saved me! I am happy to say that I heated up more of my taco meat and had some DELICIOUS paleo tacos!
I continued on with my day and headed out again with my sister to Costco to get some coconut oil. We finished up our shopping trip and I was headed home and my lovely, beautifully OLD truck decided it was not going to move anymore. Just right in the middle of town shut off. Not by the side of the road where I could easily just move over, but right in the middle of the street! Tragic. What's so funny is that you would think I would be all upset and freaking out about my truck, but instead all I could think about was getting home to cook a new exciting dinner! All ended up fine, my sweet little Trooper is at the shop and I made it home.
I love to cook. I mean LOVE to cook. This whole Paleo lifestyle has made me even more excited to do so. I am having so much fun with it! To anyone that is on the fence with it, or thinking about it, JUST DO IT! It really isn't bad. YES you will have cravings for things you are used to, YES you may be a little grouchy BUT man o' man the reward is SWEET! The food is AMAZING. You will feel GREAT for the most part. I made it home and dinner was STUPENDOUS!!!! My fiance Adrian joined in today and made a kick ass tomato sauce from scratch! Perfect with our grass fed meatballs. I am happy to say that he went ahead and decided to go Paleo with me starting today. THIS IS AMAZING. It's always more fun when you have your best friend going along with you. Even my kids ate an almost all Paleo dinner tonight.
Overall today was a good day! OH YEAH, how could I forget?! I did my squat challenge today also. I finished 55 squats on my incredibly sore legs. I did NOT, however, finish the other part of my work out. But hey, the night is still young! =) Below you will find my meals from today. Enjoy!
Breakfast: Delicious scramble w/ 3 free range omega 3 eggs, organic onion, garlic, spinach/spring mix and some steak from my tacos yesterday seasoned w/ a little kosher salt, cayenne and black pepper. On the side a half avocado w/ kosher salt and fresh black and cayenne pepper. Topped everything w/ organic pico that I made yesterday! Delicious!
Tonight's dinner, a little late: Grass fed beef meatballs seasoned with italian seasoning, kosher salt, fresh garlic, whole organic onion, Siracha and 1 organic egg in a homemade tomato sauce (5 roma's boiled and pureed) seasoned with italian seasoning, kosher salt, cracked black pepper and Siracha. Side of organic sweet potato, baby kale and beet hash seasoned w/ organic onion, garlic, cayenne pepper, black pepper and kosher salt. Then a few baby yellow carrots! Whew!

Day Numero Uno!
Today was a fantastic day!!! I am absolutely loving the challenge of cooking new things. So far, I haven't missed anything. I even ate a "taco" for lunch substituting a lettuce leaf instead of tortilla which I felt like I would hate. I also didn't miss the cheese or sour cream because I made a delicious pico and slapped on some sliced avocado. I feel really good and so far I have drank five pints of water to meet my goal of eight or more.
My exercise routine has increased... and by that I mean it now exists. I started a squat challenge my friend posted on Facebook today where each day the number you do increases until the last day you are at 200+ squats. (OMG) The first day, today, you start with 50. I got through those with burning legs and heavy breathing but I felt like I really accomplished something! =) As I was feeling so great and accomplished I noticed that my favorite Paleo Facebook page Health and Effectivity was releasing a work out regimen daily that was a little more challenging but not out of reach. SOOOOO.... I went ahead and added in the extra work out (5 push ups, 30 sec plank, 10 curls and 25 crunches) to my squat challenge! Ok, I'll be honest, I omitted the plank.
Now I know some are reading this and probably thinking "big deal" you're doing some squats and minor activity. EXACTLY! It is a very big deal damn it. I do not work out. I haven't for about three good solid years. This is EPIC. I feel so good and I am loving the challenge of cooking to fit my new lifestyle and adding in some movement or dare I say "exercise" along the way.
All in all today was great! Below you will find my meals from today. I can't wait until tomorrow to create more. I know that the lettuce taco will definitely be replayed for lunch! It is a new favorite, and oh the possibilities with the meat!!!
Breakfast: I always start with a cup of Boresha Fat Burning black coffee upon getting up then approx 30-45 min later I eat. Today's Breakfast: Free range omega 3 egg scramble with crushed garlic, organic onion, organic baby spinach/spring mix seasoned with cracked organic black pepper and kosher salt. Side of 1/2 organic avocado and raw almonds. 2 pints of water. Yummy! Was delicious!
Lunch: Beef steak pan fried in evoo with organic onion, smashed garlic, organic cilantro, organic green pepper, cumin, kosher salt and cracked black pepper topped with fresh organic homemade pico (tomato onion cilantro in fresh lemon juice with kosher salt) and 1/4 avocado with black pepper! All on a bed of organic lettuce Yum!

Dinner: Chicken legs seasoned with kosher salt, organic cracked black pepper, sage and garlic powder. Side of organic sweet potatoes with organic onion, garlic, spinach/spring mix seasoned with kosher salt, organic cracked black pepper, cheyenne pepper and red pepper flakes. DELICIOUS. Sweet potatoes were the star here.

Getting Ready!
Hello, my name is Katie and I am starting this blog today because tomorrow my eating habits will change DRASTICALLY! I will be entering what I like to call a Paleoblivion! Oblivious to all I used to want to eat and training my body not to want for things I do not need. I am excited, nervous, scared, interested and excited all over again. I decided that having a blog about my Paleo journey is a necessity for me to succeed. This will allow me to vent on my not so hot days and shout out my happiness on the days that are a breeze!
Throughout this journey I hope to see changes in my body and my overall sense of well being. I am starting my journey at 210 lbs. I would love to see myself back at a healthy 145 lbs. I am not considering this a "diet" but rather a lifestyle change. Something that is permanent. I am going into it with a strong mind and desire to change my eating habits. I invite you to come along to hear and see my journey... hell come take it with me if you wish! See you tomorrow for day one.
